New restaurant deal is sure to get your goat!

BUTCHER John Mettrick has a slice of the restaurant market — he is the sole meat supplier for a Hilton hotel eaterie.
The deal was struck after David Gale — now boss of the Podium restaurant in Deansgate — sampled Mettrick wares as a judge at the North West Fine Food Awards. The Glossop High Street shop’s goat cutlets won its prestigious Best Fresh Meat Product category earlier this year.
Mr Mettrick, 45, said: "David Gale liked what he tasted of ours. And when he got the position at the Hilton’s Podium, he wanted someone who specialised in local meats.
"We have heard that inside the first week, one of our customers went in the restaurant and announced he was eating there because it was Mettrick meat. We didn’t expect that. It just happened."
Mr Mettrick is excited about the challenge, and thinks selling to the dining trade is the way forward.
He said: "We haven’t the infrastructure to deliver to Hilton hotels all over the place. But we’re looking into supplying other restaurants in the area."
Manchester Evening News food critic Neil Sowerby was impressed with the ‘carnivore starters’ and beef fillet he ordered at the Podium —calling them ‘a rare delight’.
John Mettrick is the fifth generation of the famous family butchers. The Hadfield branch appeared on television’s black comedy The League of Gentleman. The Glossop store has a £2m turnover and employs 60 staff.
